Proof + Pantry's acclaimed executive chef Julio Peraza introduces us to a brand new menu full of bright flavors and impeccably-sourced ingredients. With a larger selection of dishes that adds more variety of American fare, guests can enjoy new featured items like the Soft Egg complete with cheddar polenta, and brown beech mushroom. Or try some meatier options such as the Kobe Beef Tongue Ravioli with romesco, duxelles and braising greens and the Short Rib Bourguignon with pearl onions, Thumbelina carrots, linguine and beech mushrooms. 

Proof + Pantry's signature dishes we've all grown to love including the Half Chicken with polenta, sunburst squash and leek rings will continue to be a menu staple.  Peraza added a “Sides” category, for those desiring a little something extra.
